GOULASH
SERVES 4 PREP TIME: 20 MINUTES COOK TIME: 1 HOUR, 50 MINUTES
Tender cuts of beef cooked in tasty sweet paprika melt in your mouth in this Hungarian goulash recipe. Traditionally, goulash is served on egg noodles or spaetzle. Here, zucchini ribbons fill in for the noodles, creating a satisfying yet flavorful low-carb meal.
4 tablespoons unsalted butter, divided
1 pound beef chuck roast, cut into 1-inch pieces
½ teaspoon salt
¼ teaspoon freshly ground black pepper
1 onion, chopped
1 garlic clove
2 tablespoons sweet paprika
1 cup unsalted beef broth
1 (14-ounce) can crushed tomatoes, undrained
3 zucchini
2 tablespoons sour cream
1 Preheat the oven to 325°F.
2 In a large ovenproof Dutch oven with a lid over medium-high heat, melt 2 tablespoons of butter.
3 Season the beef with salt and pepper, and add it to the butter. Cook for 7 to 8 minutes, turning occasionally, until it is browned on all sides. Using tongs, transfer the beef to a plate and set aside.
4 Add the onion to the pot. Cook for about 5 minutes, stirring occasionally, until it begins to brown.
5 Add the garlic. Cook for 30 to 60 seconds, stirring constantly, until fragrant.
6 Stir in the sweet paprika, beef broth, and tomatoes, scraping any browned bits from the bottom of the pot.
7 Return the reserved beef to the pot. Bring to a simmer.
8 Cover the pot, and place it in the preheated oven. Cook for about 90 minutes, or until the beef is tender.
9 While the beef cooks, using a vegetable peeler, cut the zucchini into long ribbons. Cut the ribbons into halves or thirds, crosswise.
10 When the beef is tender, remove the pot from the oven.
11 Stir in the sour cream.
12 In a large nonstick skillet over medium-high heat, heat the remaining 2 tablespoons of butter.
13 Add the zucchini. Cook for about 4 minutes, stirring occasionally, until soft.
14 Spoon the goulash over the zucchini noodles and serve.
